White Wine Mac and Cheese

White Wine Baked Mac and Cheese

 

My specialties in the kitchen consist of everything comfort food-related which means I’m thriving with the fall weather. I have always loved baked mac and cheese, and recently I got to thinking – why not add wine?


White wine and cheese are a match made in heaven – and this white wine baked mac and cheese recipe is divine. I served mine up with brown butter breadcrumbs, but this recipe is fabulous on its own as well!

 

Ingredients

Mac and Cheese

  • 18 ounces sharp cheddar cheese (I did ½ white, ½ orange)
  • 1 lb pasta of your choice
  • 6 tbsp salted butter
  • 1/3 cup + 1 tbsp all-purpose flour
  • 3 cups milk
  • 1 cup Out of Office White Blend
  • 1/4 tsp salt
  • 1/4 tsp pepper

Brown Butter Breadcrumbs

  • 2 tbsp salted butter
  • 1/2 cup breadcrumbs (I like to let old bread dry out on the counter and then toss it in my Vitamix)
  • A pince of dried sage
  • 1/2 cup of sharp cheddar for mixing with breadcrumbs for baking



Breadcrumbs Instructions


Step 1:

Melt the butter in sauce pan over medium heat.


Step 2: 

Add herbs and stir until browned (usually a few minutes).


Step 3: 

Add breadcrumbs and stir over medium heat for a few minutes or until breadcrumbs are browned.



Mac and Cheese Instructions

Step 1:

Preheat oven to 350F. Lightly grease a large baking dish (3-4 qt) with butter. Set aside.


Step 2:

Cook pasta according to instructions on package and set aside. I usually make mine a little al dente since it will be cooked more when it’s baked in the oven with the cheese sauce.


Step 3: 

In a large sauce pan melt the butter over medium heat.


Step 4:

Add flour and stir with a whisk until combined.


Step 5:

Slowly add in milk, stirring to ensure there are no clumps. 


Step 6: 

Add in wine and continue to stir until you see small bubbles begin to form.

 

Step 7:

Gradually add in the shredded cheese, whisking until smooth.


Step 8: 

Turn off the heat and add cooled pasta to cheese sauce. 


Step 9:

Pour cheese and pasta mixture into greased baking dish.


Step 10: 

Combine breadcrumbs and ½ cup of cheese in a bowl and pour over the cheese and pasta mixture.


Step 11: 

Bake for 30 minutes or until browned.


Step 12:

Serve & enjoy!
